it's duck season!!

Ingredients
|
- ducks
- salt
- pepper
- chopped onion
- carrots
- celery
- apples
- bacon strips
|

Directions
|
Let duck stand in salted water 1/2 hour, then wash & dry with paper towel. Rub generously with salt & pepper. Stuff cavities with a mixture of chopped onion, carrots, celery and apples (use about one each and throw away after cooking). Drape strips of bacon across top of duck in the smoker. Cook in the Old Smokey Electric Smoker on High for about 30 minutes, then reduce heat to Medium and cook until tender.
