RECIPES // Smoked Venison Saddle

Ingredients

  • venison saddle
  • salt pork or bacon strips
  • garlic
  • butter
  • pepper, paprika, cayenne
Directions

Place strips of salt pork or bacon on top of the meat and rub it with a cut clove of garlic and some butter. Sprinkle with pepper or paprika and add a few grains of cayenne for flavor. Cook in the Old Smokey Electric Smoker on High for 30 minutes, then reduce heat to Medium until tender, about 30 minutes per pound.
