Ingredients
|
- venison saddle
- salt pork or bacon strips
- garlic
- butter
- pepper, paprika, cayenne
|

Directions
|
Place strips of salt pork or bacon on top of the meat and rub it with a cut clove of garlic and some butter. Sprinkle with pepper or paprika and add a few grains of cayenne for flavor. Cook in the Old Smokey Electric Smoker on High for 30 minutes, then reduce heat to Medium until tender, about 30 minutes per pound.
