RECIPES // Marinated Venison Roast

venison roast? mmmmmm...
Ingredients

  • venison roast
  • dry wine
  • 6-8 black peppercorns
  • 1 bay leaf
  • 10-12 whole cloves
  • 1 sliced onion
Directions

Place roast in large pot and cover with marinade: equal parts water and dry wine to which is added peppercorns, bay leaf, whole cloves and sliced onion. Leave meat in the marinade for 24 hours, turning occasionally. Remove from marinade and pour about 1/2 cup marinade into the drip pan. Place roast on rack of Old Smokey Electric Smoker and cook for 30 minutes on high, then reduce heat to Medium and cook for 30 minutes per pound.
