Carrabba's Old Smokey Steak

This isn't just any steak recipe. This steak recipe is the legendary steak that is still served today at the two original Carrabba's locations in Houston, TX. Johnny Carrabba's Grandmother taught him how to grill steaks on the Old Smokey using the Old Smokey BBQ Sauce recipe that used to be included in the Old Smokey instruction manual. Nowadays, you can find it right here, on the Old Smokey website as well as in Johnny Carrabba's cookbook!

Ingredients
- Old Smokey BBQ Sauce
- Kosher salt
- Fresh ground black pepper
- Oregano
- Your preferred cut of Beef (Johnny Carrabba’s favorite is a ribeye)
Equipment
- Old Smokey Grill
- Starter
- Charcoal
- Pecan & Oak as a topper to add a smokey flavor
- Sop Brush
Instructions:
- Fire it up and get the grill hot. When the coals are white, it's ready to cook!
- While you're waiting, make the Old Smokey BBQ Sauce.
- Season the meat with kosher salt, fresh ground black pepper and oregano
- Sop the meat with our Old Smokey BBQ sauce
- Put the meat on the grill

Sop and turn the meat multiple times to build the char.
- Per Johnny, char is an essential ingredient!
- Cook to medium rare
- Let rest for 10 mins before cutting in to it.
