Old Smokey Barbecue Sauce

Why is it called a BBQ Sauce when it's actually a butter baste? We don't know, and frankly, once you try it, you won't care!
If you bought an Old Smokey from us back in the day, you might already have this recipe. It used to come with every Old Smokey that was sold. That's how it ended up in Johnny Carrabba's family cookbook and then became a staple on the his famous steaks served at his restaurants! If it's good enough for Mr. Carrabba, we promise, you're gonna love it.
- Prep Time: 5 Minutes
- Cook Time: 3 Minutes
- Yield: Enough for about 6 steaks
Ingredients:
- Juice of 1 Lemon
- 2 Tsp Flour
- 1 Tsp Red Pepper
- 1 Tsp Black Pepper
- 2 Tsp Dry Mustard
- 1 Clove of Garlic
- ½ Tsp Sugar
- ½ Tsp Salt
- White Vinegar

2 Sticks of Butter or Margarine
Instructions:
- Put ingredients into a measuring cup, then fill to the 1 cup line with vinegar. Blend well.
- Melt 2 sticks of margarine or butter in sauce pan, add mixture & cook until thickened - about 3 minutes.
- You'll want a basting brush to add the sauce to the steaks while they are on the grill.
This sauce may be used on roasts, steaks, chicken, hot dogs, hamburgers, pork chops, spare ribs, etc. It can also be adjusted for different cuts as shown below.
Additional Cooking Suggestions for the Old Smokey Barbeque Sauce
With most meats, the combinations of the Old Smokey BBQ Sauce and the Old Smokey cooking method will tenderize any cut of meat you want!

Roasts, steaks and chops
- Brush both sides with Old Smokey Barbecue Sauce and place on the grill. If desired, sear or brown meat on outside.
- Let the fire flame over the meat for about a minute when first placed on the grill, then replace cover to put out flame and cook.
- Brush the sauce and turn the meat about every 30 minutes.

Chicken
- About 8 hours before cooking time, sprinkle cleaned and split chicken with salt. Place back in refrigerator until you're ready to start cooking.
- Brush Old Smokey Barbecue Sauce on both sides and place on the grill.
- Brush with sauce and turn about every 15 minutes.

Pork roasts, ribs and sausage
- Use basic Old Smokey Barbecue Sauce, but omit the garlic and 1 teaspoon of chopped onion and 1 teaspoon of brown sugar.
- Brush meat generously with sauce and place on the grill.
- Brush with sauce and turn meat about every 20 minutes.

Hamburgers
- Add ketchup to the basic Old Smokey Barbecue Sauce (add to taste).
- Brush patties with Sauce and place on the grill.
- Brush with Sauce and turn about 10 minutes later.
- Place extra sauce on table to brush on buns in place of mustard or mayonnaise.

Hot Dogs
- Add ketchup to the basic Old Smokey Barbecue Sauce (add to taste).
- Brush franks with Sauce and place on the grill.
- Brush with sauce and turn about every 5 minutes.
- Use extra sauce to brush on buns for serving.
