Barbecued Squash

I have to admit, when I came across this recipe, it didn't sound all that exciting. Boy lemme tell ya, when these squashes were prepped and on the grill bubbling, they smelled so good and taste even better. It's a perfect Fall side dish, very easy to put together and an even better conversation starter. Enjoy!
Ingredients:
- 3 acorn squash
-
(2) 16 oz cans baked beans, drained
- 4 Tablespoons barbecue sauce
- 2 Tablespoons honey or syrup
- 4 Tablespoons dark brown sugar
- 2 Tablespoons salted butter- cut into 6 pats of butter
Instructions:
Heat up the Old Smokey Charcoal Grill. When the coals have a white ash on top, they are ready to go!
Cut each squash in half widthwise. Slice ¼” off the rounded end of each half so the squash sits upright without wobbling. Scrape out the seeds and discard. Mix beans, barbecue sauce and brown sugar in a bowl. Fill squash with mixture and top each with a pat of butter.
Grill over medium coals until sides of squash are tender and the filling is browned and bubbling. Using wood chips on the coals is a great idea! Pro tip- use large tongs and a baking sheet to help transfer the finish product from the grill to the serving area.
