Barbecued Meatloaf




Such things really are possible.

1/2 cup sweet barbecue sauce
1/4 cup ketchup
2 lbs lean ground beef
1 lb ground pork
1 1/2 cup bread crumbs
1/4 cup milk
1 egg, slightly beaten
1/4 cup bacon grease
2 tsp Worcestershire sauce
1/4 tsp garlic powder
1/4 tsp ground coriander
1/4 tsp ground cumin
1 tsp dried tarragon
1 tsp salt
1 tsp black pepper

Mix barbecue sauce and ketchup and set aside.  If using your Old Smokey Charcoal grill, prepare it for indirect cooking.   This recipe may work better in the Old Smokey Electric Smoker, though.  Brush grill or grill grate with oil.  Process meats in food processor until further ground (1 to 2 minutes).  In large bowl, mix bread crumbs and mil, then egg, bacon grease, Worcestershire sauce and seasonings.  Mix in meat.  Line a 4x9 inch loaf pan with heavy aluminum foil.  Press meat mixture into pan and remove from pan using the foil.  Place meatloaf directly on grill and remove foil.  Top with 3 tablespoons of sauce.  Grill about an hour.   Serve with remaining sauce.
