Beef Stuffed Zucchini

 

8 large zucchini
1 lb ground beef
1/2 cup chopped onion
1/3 cup fast cooking rice
2 tsp salt
1/2 tsp pepper
8 oz. can tomato sauce
olive oil

Trim ends and cut in half lengthwise 8 large zucchini.  Scoop out center of zucchinis and chop into small bits.  Brown ground beef, onion, rice, salt, pepper, zucchini bits and tomato sauce in skillet until meat is brown and vegetables are tender.  Place this mixture in zucchini boats and brush with olive oil.  Cook in Old Smokey Electric Smoker on high until zucchini boats are fork tender.
